IRISH SODA BREAD

4 C flour

1 tbsp. sugar

1 ½ tsp. baking soda

1 tsp. baking powder

½ tsp. salt

¼ C cold butter (1st amount)

1 C raisins

1 egg, slightly beaten

1 ¾ C buttermilk

2 tbsp. melted butter (2nd amount)

Combine the flour, sugar, baking soda, baking powder and salt.  Cut in the butter until the mixture resembles coarse crumbs.  Add the raisins.  Stir in the buttermilk just until moistened.  Turn out onto a lightly floured surface and gently knead 6 – 8 times.  Place the dough in a prepared round baking pan.  Using a sharp knife, cut a 1ʺ cross about 1/4ʺ deep on the top of the loaf and brush with the melted butter.  Bake at 375°F for 40 – 45 minutes or until golden brown.
