2 C leftover mashed potatoes

1/3 C flour

2 tbsp. milk

Salt & pepper

1 ¼ tbsps. butter

Combine the ingredients in a bowl and knead until smooth.  Season with salt & pepper.  Divide into 4 balls on a floured surface and flatten each into a 3ʺ patty.  Melt 1 ½ tbsp. butter in a large skillet over a medium-high heat and add the patties and cook until golden brown – about 4 – 5 minutes per side.  Add more butter to the pan as needed.  Season with salt and serve.
