½ C raisins

2 tbsp. orange juice

1 ¾ C flour

2/3 C white sugar

1 tbsp. baking powder

1 tsp cinnamon

1 tsp allspice

½ tsp salt

½ C candied peel

½ C chopped dried apricots

1 egg

1 C milk

½ C oil

2 tbsp. butter, melted

1 tsp vanilla



1 ¼ C icing sugar

4 tsp orange juice


Place raisins & orange juice in a small bowl and microwave until hot (about 1 minute).  Set aside.

In a large bowl, combine flour, sugar, baking powder, cinnamon, allspice and salt.  Stir in the raisin mixture, candied peel and apricots. In a medium bowl, whisk egg and whisk in milk, oil, melted butter and vanilla.  Add to dry ingredients, stirring until mixed (batter will be lumpy).  Pour batter into 12 greased muffin tins.  Bake at 350° F for about 20 – 25 minutes.

Glaze: Combine icing sugar and orange juice until smooth.  Drizzle over cooled muffins in a criss-cross pattern to mimic hot cross buns.

Store muffins in an air-tight container at room temperature.
