HAWAIIAN POTATO SALAD

5 medium potatoes, cooked and diced

2 stalks celery, chopped

2 medium carrots, grated

1 can (398 ml) pineapple tidbits, drained

2 C ham, chopped

2 tbsp. green relish

2 eggs, hard cooked & chopped

1 small onion, chopped

½ C green pepper, chopped

1/3 C mayonnaise

Combine the potatoes, eggs, celery, carrots, onions, pineapple, green pepper and ham in a large bowl. In a small bowl, combine the mayonnaise, relish, salt & pepper and stir into the potato mixture. Cover & chill.
