1 ½ lbs. ground beef
2 medium onions, finely chopped
3 carrots, finely chopped
3 stalks celery, finely chopped
1 – 28 oz. can tomatoes
2 C water
3 cans (284 ml) consommé
1 can (284 ml) tomato soup
1 bay leaf
1 tsp. salt
1 tsp. thyme
1 tsp. basil
½ C barley
Brown the ground beef. Add the onions and celery and cook until soft. Add all the remaining ingredients. Cover & simmer for at least 2 hours. Remove bay leaf before serving.
