1 C cooked potatoes, cubed
2 C cubed ham
½ C chopped onions
2 tbsp. butter (first amount)
2 tbsp. flour
½ tsp. each salt & pepper
1 ¼ C milk
½ C shredded cheddar cheese
1 ½ C bread crumbs
2 tbsp. butter, melted (second amount)
Cook the onions in the first amount of butter. Blend in the flour, salt & pepper. Add the milk slowly and cook until thick. Add the cheese and melt. Stir in the potatoes and ham. Place in a baking dish. Combine the bread crumbs and the melted butter and sprinkle over the top of the casserole. Bake at 375°F for 30 minutes.
