2 C cooked, cubed potatoes
2 C cubed ham
2 tbsp. butter
½ C chopped onions
2 tbsp. flour
½ tsp salt
½ tsp pepper
½ C shredded cheese
1 ½ C breadcrumbs
1 ¼ C milk
2 tbsp. butter (second amount)
Cook the onions & 2 tbsp. butter in a skillet. Blend in the flour, salt & pepper. Stir in the milk slowly and cook until thick. Add the cheese and cook until melted. Add the ham and potatoes. Mix well and place in a prepared casserole. Sprinkle with bread crumbs and dot with butter. Bake at 375°F for 30 minutes.
