1 baked pie shell
1 C crushed strawberries
1 C white sugar
1 ½ tsp. lemon juice
3 tbsp. cornstarch
4 tbsp. cold water
Small piece of butter
Strawberries
Glaze: combine the sugar, lemon juice and crushed strawberries and bring to a boil. Combine the cornstarch and cold water and stir into the strawberries. Cook until the mixture thickens. A drop or two of red food colouring may be added if desired. Remove from the heat and add the butter.
Line the pie shell with strawberries and pour the glaze over the berries. Cool before serving.
