Bread:
2 C flour
1 tsp baking soda
½ tsp salt
¼ tsp cinnamon
1 egg (at room temperature)
¼ C brown sugar
¾ C white sugar
1 C buttermilk
1/3 C canola oil
2 tsp vanilla
1 ½ C chopped strawberries
Glaze:
1 C icing sugar
½ tsp vanilla
1 tbsp. milk
Preheat oven to 350°F. Grease a 9X5” loaf pan.
Combine the flour, soda, salt & cinnamon together and set aside. Whisk the egg, brown sugar & white sugar until combined. Whisk in the buttermilk, oil and vanilla. Slowly pour the egg mixture into the dry ingredients and gently mix until the batter is smooth. Fold in the strawberries.
Spread the batter into the loaf pan and bake for about 1 hour. Allow bread to cool completely.
Glaze:
Whisk the icing sugar, vanilla and milk together and creamy. Drizzle over bread.
