5 lb pork loin roast
1 tbsp. minced ginger
2 cloves minced garlic
1 tsp. sage
1 tsp. salt
1 ¼ tsp. hot sauce
1/3 C jam (peach, apricot, etc.)
Mix ginger, sage, garlic and salt together and rub over roast. Roast at 325°F for 1 ½ hours. Remove from oven & score meat in diamond pattern. In small bowl, combine the jam and hot sauce. Spread generously over roast and cook for 1 hour.
