
FRUIT PIZZA
Crust:
¼ C butter
32 large marshmallows
5 C Rice Krispies
Melt the butter and marshmallows together. Add the Rice Krispies and stir until the cereal is well coated. Press onto a buttered pizza pan and press the cereal mixture evenly onto the pan. Cool.
Topping:
1 large pkg. cream cheese, softened
2 C icing sugar
¼ C cocoa
16 strawberries, halved
1 banana, sliced
2 kiwi, peeled & sliced
In a small bowl, mix the cream cheese, icing sugar and cocoa together until smooth. Using a spatula, spread over the cooled crust. Arrange the fruit over the topping.
Glaze:
2 tbsp. apricot jam
1 ½ tbsp. water
Mix together and using a pastry brush, dab the jam mixture onto the fruit. The glaze will prevent the fruit from turning brown. Keep refrigerated.
