1 bunch medium sized asparagus, about 1 lb.
2 tbsp. extra virgin olive oil
2 tbsp. freshly grated Parmesan cheese
1 tsp. lemon zest
Salt and freshly ground black pepper
Prepare the asparagus by rinsing it thoroughly and break off any tough, white bottoms. Cut into 1 – 2″ sections, slicing the asparagus on a slight diagonal. Fill a medium saucepan with boiling water and add the asparagus and reduce heat slightly and parboil for 2 minutes and drain. While the asparagus is still hot, place in a bowl and toss with the olive oil, Parmesan cheese and lemon rind. Add salt & pepper to taste. Serve warm or at room temperature.
