1 C canola oil

2 C brown sugar

2 tsp. vanilla

3 eggs

3 C flour

1 ½ tsp. baking soda

1 tsp. salt

3 C apples, peeled & chopped

1 C coconut

1 C chopped pecans

Combine the oil, brown sugar & vanilla and stir in the eggs and beat well.  Combine the dry ingredients, add to the sugar mixture and mix well.  Stir in the apples, coconut and pecans. Spread the batter in a greased 13X9″ pan and bake at 350°F for 35 – 40 minutes.
