FRENCH TOAST CASSEROLE

1 loaf French bread, cut into 1ʺ cubes

8 eggs

3 C milk

4 tsp white sugar

1 tsp vanilla

¾ tsp salt

2 tbsp. butter

Place bread in a greased 9X13ʺ pan.  Beat eggs, milk, sugar, vanilla and salt together and pour over the bread.  Cover and refrigerate overnight.  Remove from refrigerator 30 minutes before baking.  Dot with butter.

Topping:

3 tbsp. white sugar

2 tsp cinnamon

Combine sugar and cinnamon and sprinkle over the top of the bread – egg mixture.  Cover and bake at 350°F for 45 – 50 minutes or until a knife inserted in the centre comes out clean.  Let stand for 5 minutes before serving.
