½ C cold, mashed potatoes

¼ C white sugar

1 egg, slightly beaten

½ C sour cream

1 tsp. vanilla

1 ½ C flour

½ tsp. baking soda

¼ tsp. baking powder

Canola oil for frying

Icing sugar (optional)

Combine the potatoes, sugar, egg, sour cream & vanilla and mix well.  Combine the flour, baking soda & baking powder and stir into the potato mixture.  Heat the canola oil in an electric frying pan to 375°F.  Drop teaspoonfuls of dough into the hot oil.  Fry until golden brown.  Drain on paper towels.  If desired, roll in icing sugar while warm.
