2 C Greek yogurt
1/3 C honey
3 C chopped honeydew melon
2 medium peeled, seeded, chopped cucumbers
1 tbsp fresh mint leaves, optional
2 C crushed ice cubes
In a blender, place half of the yogurt, honey, melon, cucumber & mint (if using it). Cover and process until blended. Add 1 C of ice, cover and process until smooth. Pour into glasses. Repeat with remaining ingredients.
