CRUNCHY GINGERSNAP COOKIES

1 ½ C butter

2 C white sugar

2 eggs

½ C molasses

4 C flour (a little extra may be required)

2 tsp. baking soda

2 tsp. cinnamon

2 tsp. ginger

Cream the butter and add the sugar, eggs and molasses.  Combine the dry ingredients and slowly add to the creamed mixture.  Roll the dough into 1″ balls (if the dough is very soft, add some extra flour) and roll the balls in white sugar.  Place on parchment lined cookie sheets and bake at 350°F for approximately 12 – 15 minutes.
