CRISPY SWEET POTATO BAKE

3 C cooked, mashed sweet potatoes

½ tsp. butter

1 tsp. vanilla

2 eggs

½ C milk

Topping:

1 C brown sugar

1/3 C flour

1/3 C butter

1 C chopped pecans

Beat together the sweet potatoes, butter, vanilla, eggs and milk and place in a casserole. Combine the ingredients for the topping and sprinkle over the potatoes.  Bake at 375°F for 20 – 25 minutes.
