2 tbsp. butter

1 C white sugar

2 eggs, well beaten

1 ½ C coconut

Raspberry or strawberry jam

12 tart shells

Combine the butter, sugar, eggs and coconut together.  Place a small spoonful of jam in the bottom of each tart shell and then pour the coconut mixture into each tart shell.  Bake at 375°F until browned.
