1 1/3 C flaked coconut
1/3 C white sugar
2 tbsp. flour
1/8 tsp salt
2 egg whites, beaten until stiff
½ tsp vanilla
Combine coconut, sugar, flour and salt. Stir in beaten egg whites and vanilla. Drop by rounded teaspoonfuls onto parchment lined baking sheets. Bake at 325°F for 18 – 20 minutes or until golden brown. Cool on wire racks.
