6 tbsp butter, softened

1 C white sugar

1 egg

1 tsp vanilla

1 C unpeeled zucchini, grated

1 ½ C flour

¼ C cocoa

1 ¼ tsp baking powder

¾ tsp baking soda

½ tsp salt

1 tsp cinnamon

¼ C milk

½ C chopped walnuts

Cream butter and sugar together and beat in egg. Add vanilla and zucchini and stir together. Combine dry ingredients and stir in just to moisten. Add milk and walnuts and stir to mix. Spread batter in a greased 9x5x3” greased loaf pan. Bake at 350°F for approximately 1 hour.
