
CHOCOLATE ZUCCHINI CAKE
2 C flour
2 C white sugar
½ C cocoa
1 ½ tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
2 large eggs
¾ C plain yogurt
¼ C canola oil
2 tsps. vanilla
2 C shredded zucchini
Combine the first seven ingredients. In another bowl, whisk the eggs, yogurt, oil and vanilla until blended. Add to the flour mixture and stir just until moistened. Fold in the zucchini. Pour the batter into a prepared 13X9″ pan and bake at 350°F for 25 – 30 minutes.
