
1 ½ C diced chicken
3 tbsp. minced onions
1 can (398 ml) cream of chicken soup
1 tbsp. lemon juice
¼ tsp. pepper
1 ½ C cooked rice
1 ½ C diced celery
½ tsp. salt
¾ C mayonnaise
2 C potato chips, crushed
Combine the first 8 ingredients and mix well. Stir in the mayonnaise and mix. Fold the mixture into a casserole and bake at 450°F for 15 minutes. Remove from oven and sprinkle with the potato chips and return to oven and bake uncovered at 350°F for about 30 minutes.
