CARROT PINEAPPLE MUFFINS

1 C white sugar

2/3 C oil

2 eggs

1 tsp vanilla

½ C crushed pineapple with juice

1 C grated carrots

1 ½ C flour

1 tsp baking powder

1 tsp soda

1 tsp cinnamon

½ tsp salt

Combine the dry ingredients and set aside.  Combine the sugar, oil, eggs, vanilla, pineapple with juice and carrots and mix well.  Add the carrot-pineapple mixture to the dry ingredients stirring just to combine.

Fill greased muffins tins ¾ full.  Bake at 350°F for about 25 minutes.
