CARROT LOAF

2 C flour

2 tsp. baking soda

2 tsp. cinnamon

½ tsp. salt

1 ½ C white sugar

½ C raisins

½ C coconut

½ C chopped pecans

1 C canola oil

2 tsp. vanilla

2 C grated carrots

3 eggs, beaten

Combine the flour, baking soda, cinnamon, salt and white sugar.  Add the raisins, coconut and pecans.  Combine the oil, vanilla, carrots and eggs and add to the flour mixture.  Mix well.  Pour into a greased 9X5X3″ loaf pan.  Bake at 350°F for about 1 hour.
