Base:

½ C butter

¼ C white sugar

1 ¼ C flour

Top layer:

2 eggs

1 C brown sugar

½ C crushed pineapple (drained)

1 C coconut

1/3 C chopped cherries

1 tsp. rum flavouring

2 tbsp. flour

½ tsp. baking powder

Base: combine the ingredients and mix well. Press into an ungreased 9ʺ pan and bake at 350°F for 15 minutes.

Top layer: Beat the eggs and fold in the remaining ingredients. Spread over the base and return to oven and bake at 350°F for 25 – 30 minutes.
