CABBAGE SOUP

1 lb. ground beef

1 onion, chopped

½ C celery, chopped

½ green pepper, chopped

1 tbsp. canola oil

2 C raw potatoes, diced

1 C grated carrots

20 oz. can diced tomatoes

1 can tomato soup

2 beef bouillon cubes

1 pkg. onion soup mix

½ tsp. pepper

1 C fresh mushrooms

½ cabbage, chopped

6 C water

Brown the beef, onion, celery and green pepper in a large stockpot in the oil until tender.  Add all of the other ingredients except the cabbage.  Simmer, uncovered, for 1 hour.  Add the cabbage and cover, and simmer for 1 more hour.
