BUTTERNUT SQUASH SOUP

1 medium butternut squash
3 tart apples, peeled & diced
1 medium onion, chopped
¼ tsp. rosemary
¼ tsp. pepper
1 tsp. salt
3 C chicken broth
2 C water
¼ C cream
Fresh parsley, chopped

Remove the seeds from the squash, peel and cut into large pieces.  Combine the squash with the apples, onions, rosemary, salt, pepper, broth and water in a heavy saucepan.  Bring to a boil and simmer, uncovered for 45 minutes.  Puree the soup and return the mixture to the saucepan and bring to a boil.  Reduce the heat and simmer on low, until the soup is hot.  Before serving, add the cream.  Serve hot with the fresh parsley on top.
