4 cups of chopped broccoli
6 cups of cooked white rice
¾ cup of finely chopped onion
2 eggs, beaten
3 cups of milk
1 teaspoon of salt
¼ teaspoon of pepper
¼ teaspoon of nutmeg
½ cup of grated cheese
Blanch broccoli for 2 minutes in boiling water and drain thoroughly
Mix together broccoli, rice and onion
Place in buttered ½ cup size casserole dish
Combine eggs, milk, salt, pepper and nutmeg
Pour over rice mixture
Sprinkle with cheese
Bake in 350 degrees F oven for 30 minutes or until bubbling
Serves 10 to 12 people
