BROCCOLI RICE CASSEROLE

4 C chopped broccoli

6 C cooked white rice

¾ C finely chopped onion

2 eggs, beaten

3 C milk

1 tsp. salt

¼ tsp. pepper

¼ tsp.  nutmeg

½ C grated cheese

Blanch broccoli for 2 minutes in boiling water and drain thoroughly. Combine the broccoli, rice and onion and place in buttered baking dish.

Combine the eggs, milk, salt, pepper and nutmeg and pour over rice mixture. Sprinkle with cheese.  Bake in 350°F oven for 30 minutes or until bubbling.
