3 tbsp. butter
¼ C chopped onion
5 C chopped broccoli
2 cans chicken broth
3 C milk
1/3 C flour
Salt & pepper to taste
2 ½ C shredded cheddar cheese
In a large saucepan, melt the butter and sauté the onion until tender. Stir in the broccoli and chicken broth. Bring to a boil over a medium-high heat. Reduce the heat, cover and simmer 12 minutes or until the broccoli is tender. In a bowl, gradually stir the milk into the flour stirring until smooth. Add to the saucepan. Cook and stir over a medium heat until mixture boils and thickens. Remove from the heat. Add the cheese, salt & pepper.
