BROCCOLI CASSEROLE

4 C broccoli, chopped coarsely

3 tbsp. butter, melted

3 tbsp. onion, chopped

2 tbsp. flour

1 tsp. salt

1 ¼ C milk

2 C shredded cheddar cheese

2 eggs, well beaten

Cook the broccoli until tender crisp (do not overcook) and set aside.  Sauté the onion in the melted butter.  Blend the flour and salt together and gradually stir in the milk.  Cook over a medium heat, stirring constantly until mixture comes to a boil and thickens.  Remove from the heat and stir in the broccoli and cheese, stirring until the cheese is slightly melted.  Stir in the beaten eggs.  Place the mixture in a greased baking dish.  Bake at 325°F for about 30 minutes or until firm to the touch.
