1 lb. bacon, diced

1 medium sweet onion, chopped

6 eggs, lightly beaten

4 C hash browns, thawed

2 C shredded cheddar cheese

1 ½ C cottage cheese

1 ¼ C shredded Swiss cheese

Cook the bacon and onion until the bacon is crisp and drain.  Combine the remaining ingredients and stir in the bacon mixture.  Spread the mixture in a greased baking dish.  Bake, uncovered, at 350°F for 35 – 40 minutes or until set and bubbly.  Let stand for 10 minutes before cutting.
