BREAD & BUTTER PICKLES (MICROWAVE)

2 C cucumbers, sliced 1/4ʺ thickness

1 medium onion, sliced into rounds to = ¾ C

1 C white sugar (can be reduced to ¾ C)

½ C distilled white vinegar

1 tsp. salt

½ tsp. mustard seed

¼ tsp. celery seed

¼ tsp. turmeric

Combine all of the ingredients in a 2 quart microwave safe bowl.  Cook for 7 – 8 minutes.  Stir twice until the cucumbers are crisp, but tender and onion is translucent.  Sterilize jars if you are just sealing them. Ladle into glass jars (rinsed with hot water to prevent cracking).  Cover, then cool slightly and refrigerate.
