
1 C sour cream
1 C All Bran
2 eggs, beaten
1 C brown sugar
½ C canola oil
1/3 C orange juice
½ C raisins
1 ½ C flour
2 tsp. baking powder
2 tsp. baking soda
1 tsp. cinnamon
Mix the sour cream and All Bran together and let sit for a few minutes to soften the bran. Add the eggs, sugar, oil, juice and raisins. Combine the dry ingredients and make a well in the centre. Pour in the bran mixture and mix just until the dry ingredients are moistened. Pour into greased muffin tins. Bake at 350°F for 15 – 20 minutes.
