BLUEBERRY SCONES

2 C flour

1/3 C white sugar

2 tbsp. baking powder

¼ tsp. salt

1 C blueberries

2/3 C cold butter, cubed

2 eggs

¼ C milk

2 tsp. grated lemon rind

¼ C lemon juice

Stir together the flour, sugar, salt & baking powder and using a pastry blender, cut in the butter until the mixture is crumbly.  Add the blueberries.  Combine the eggs, milk, lemon rind and juice and beat together and add to the dry ingredients until the mixture clumps together.  Turn the dough out onto a floured surface and knead about 10 times.  Form the dough into a 1/2ʺ circle and cut into wedges.  Place wedges onto a parchment lined cookie sheet and bake at 425°F for 12 minutes.
