BLUEBERRY LEMON MUFFINS

1 ¾ C flour

½ C white sugar

3 tsp. baking powder

1 C milk

½ C melted butter

1 egg

1 C blueberries

Grated rind of 1 lemon

Combine the flour, sugar & baking powder and fold in the blueberries.  Combine the egg, milk, melted butter & lemon rind and stir into the flour mixture, stirring just to moisten.  Place the batter in greased muffin tins and bake at 350°F for 20 minutes.
