1 C butter

1 ½ C white sugar

2 eggs

1 C sour cream

1 tsp vanilla

2 C flour

1 tsp baking powder

¼ tsp baking soda

1 ¼ C blueberries

Cream the butter and sugar until fluffy. Beat in eggs, one at a time. Fold in sour cream and vanilla. Combine the dry ingredients and add to the butter mixture. Fold in the blueberries. Spread batter in a greased bundt pan and bake at 350°F for about 1 hour. Cool for 20 minutes before removing from pan. Serve with vanilla ice cream and blueberry sauce.

Blueberry Sauce:

1 C blueberries

¼ C honey

¼ C freshly squeezed orange juice

1 tsp grated orange rind

1 tbsp. cornstarch

¼ C water

Combine the blueberries, honey, orange juice and rind in a small saucepan and bring to a boil. Boil for about 3 – 4 minutes. Mix the cornstarch and water together and stir into the blueberry mixture and cook until thickened. Serve the sauce warm or cold.
