BLUEBERRY BUTTER TARTS

12 unbaked tarts shells

1 egg, beaten

½ C corn syrup

1 tsp lemon juice

1 tsp vanilla

1/3 C brown sugar

1 tbsp. flour

3 tbsp. melted butter

1 ½ C blueberries

Whisk egg, corn syrup, lemon juice and vanilla together.  In another bowl, combine the sugar and flour and stir into the egg mixture and stir in the melted butter.  Divide the blueberries equally among the tart shells.  Pour the batter over the blueberries.  Bake at 375°F until the mixture bubbles (20 – 25 minutes).
