1 ¾ C flour

1 tsp. baking powder

½ tsp. salt

1 tsp. baking soda

½ C white sugar

¼ C brown sugar

1 egg

½ C canola oil

½ C sour cream

1 tsp. vanilla

2 large ripe bananas, mashed

1 C coconut

½ C chopped walnuts

Combine the flour, baking powder, salt, baking soda, white & brown sugar and mix well.  Combine the egg, oil, sour cream, vanilla and bananas.  Add the dry ingredients to the egg mixture and mix only until the dry ingredients are wet.  Stir in the coconut and walnuts.  Place the batter in greased muffin tins and bake at 350°F for 20 – 25 minutes.
