BANANA COCONUT LOAF

2 eggs

½ C melted butter

1 C mashed bananas

½ tsp. almond flavouring

1 C white sugar

1 ½ C flour

1 ½ tsp. baking powder

½ tsp. baking soda

½ C coconut

½ C chopped walnuts

½ C chopped candied red cherries

Beat the eggs until frothy.  Add the sugar & butter and beat well.  Stir in the bananas, walnuts & coconut and mix well.  Combine the dry ingredients and add to the batter and mix well.  Spread the batter in a prepared loaf pan and bake at 350°F for about 45 minutes.
