Apple Waldorf Salad

2 1/2 cups diced apples

2 tsp lemon juice

Boiling Water

1/4 cup raisins, washed

1/3 cup diced celery

1/3 cup walnuts (optional)

Pinch salt

Dash white pepper

1/4 cup mayonnaise OR salad dressing

1 tsp chopped parsley (optional)

Directions:

Sprinkle apples with lemon juice.  Pour boiling water over raisins; set aside for 5 min.  Drain well and add to apples.  Add remaining ingredients, tossing lightly.  Refrigerate 1-2 hours before serving.  Serves: 6
