APPLE PUDDING

6 apples, peeled, cored & thinly sliced

¾ C brown sugar

Batter:

1 2/3 C flour

3 tsp. baking powder

½ tsp. salt

½ C white sugar

1/3 C butter

1 egg, beaten

½ C milk

Topping:

1 tsp. cinnamon

2 tbsp. white sugar

Preheat the oven to 400°F.  Spread the apple slices in a greased 13X9ʺ pan.  Sprinkle with the brown sugar.  Place pan in the oven while preparing the batter.

Batter: Combine the flour, baking powder, salt and white sugar in a bowl.  Cut in the butter until the mixture is crumbly.  Stir in the egg and milk and mix well.  Remove apples from oven and spread the batter over the apples.

Topping: Combine the sugar and cinnamon and sprinkle over the batter.

Bake for 20 – 25 minutes or until the apples are tender.
