½ C butter

1 C white sugar

1 egg

1 tsp. cinnamon

3 C diced apples

½ C chopped walnuts

1 C flour

1 tsp. baking soda

1 tsp. vanilla

Cream the butter and sugar together.  Add the egg and mix.  Add the remaining ingredients and mix well.  Spread the batter in a greased baking dish.  Bake at 350°F for 30 – 40 minutes.  Serve warm with the Orange Sauce.

Orange Sauce:

¾ C + 2 tbsp. white sugar

3 tbsp. flour

1 C water

1 egg yolk, slightly beaten

1 tbsp. butter

¼ C orange juice

1 tbsp. lemon juice

¼ tsp. grated orange rind

¼ tsp. grated lemon rind

Combine sugar & flour.  Add the water and egg yolk and mix thoroughly.  Cook, stirring constantly, until thick (I use a double boiler).  Remove from heat and add the butter, juices and rinds.  Serve either warm or cold over the warm pudding.
