2 C flour

2 tsp. baking powder

1 tsp. baking soda

2 tsp. cinnamon

¾ C milk

2 tbsp. lemon juice

2/3 C brown sugar

1 egg

2 tsp. grated lemon rind

1/3 C canola oil

1 C shredded carrots

1 C shredded apples

1 C raisins

Whisk together the flour, sugar, baking powder, cinnamon, baking soda & baking powder and set aside.  Whisk together the egg, milk, lemon juice, lemon rind and oil.  Stir in the dry ingredients.  Fold in the carrots, apples and raisins mixing only until the dry ingredients are moistened.  Place batter in greased muffin tins and bake at 350°F for 25 – 30 minutes.
