
1 C sifted cake flour
1 ½ C white sugar (divided)
12 egg whites
1 ½ tsp. cream of tartar
¼ tsp. salt
1 ½ tsp. vanilla
½ tsp. almond extract
Combine the flour and 1 C sugar. In another bowl, combine the egg whites, cream of tartar and salt and beat until foamy. Slowly add the remaining sugar and beat until stiff. Blend in the vanilla and almond extracts. Slowly blend in the flour mixture. Place the batter in an ungreased 10ʺ tube pan. Bake at 375°F for 30 – 35 minutes.
