|  |  EASY SALMON CHOWDER March 9, 2010 | 1 7 ¾ oz can salmon, drained, flaked. RESERVE LIQUID 3 slices bacon, diced 1 medium onion, diced 2 celery stalks, diced 2 medium carrots, diced 2 10 oz cans of Cream of Potato or Cream of Celery soup 2 cups milk 1 tsp salt
Sauté onions and bacon. Add celery and carrots. Cook 15 minutes. Add soup, milk, salt and liquid from drained salmon. Add salmon flakes. Heat, but DO NOT BOIL. Serves 6 people.

1 cup shrimp, frozen or canned
4 cups boiled rice
1 cup Danish blue cheese
Add shrimp to soup.
Put one half of the rice in the bottom of casserole.
Cover with shrimp mixture.
Layer the remaining rice.
Crumble the blue cheese over the top.
Cook in a 375 degree oven 15 - 20 min.
